Owned by Kevin Gambino who has been a chef for 15 years.
Kevin Gambino was born and raised in New Orleans and grew up with the French and Italian Creole cooking that is steeped in the history of the city. Gambino started working in restaurants around the city, washing dishes and bussing tables, at the age of fourteen. He knew he wanted to cook at an early age, but that idea was put on the back burner while Gambino ran off and served as a Sergeant in the United States Marine Corps. Upon his return home, he got a job at the classic 100-year-old French Restaurant, Arnauds’, in the heart of the French Quarter.
Gambino continued to work for some of the finest chefs in New Orleans: Susan Spicer of Bayona; Frank Brigsten of Brigsten’s; and Donald Link of Herbsaint, Cochon, Cochon Butcher and Peche. All three of these chefs are James Beard Award winners that Gambino worked under. He worked for Donald link for ten years and became chef de cuisine at his highly recognized American French bistro, Herbsaint. After moving to Austin, Gambino became interested in food trucks and their versatility. From experience and a bursting need to create something of his own, Gambino’s Cajun Creole was born in 2016.
